storage The product is easily fermentable; the average storage time is 12 months if it is stored in a cool and dry place, away from direct sunlight and heath, at a temperature between + 5 and +7°C.
production technique The must is filtered and condensed inside a four-effect evaporator, under vacuum. The obtained concentrate is immediately cooled down to +5 °C.
